Salsa:
2 Fresh Kiwis (Firm-Medium Ripe)
1 Fresh Mango
1 cup finely diced Pineapple
½ cup finely diced Tomatoes
¼ cup finely diced white onion
¼ cup finely diced green onion
½ tsp ground cumin
½ tsp ground coriander
½ tsp crushed red pepper or chili flakes
pinch of ground cinnamon
Peel and dice kiwi and mango
Add remaining ingredients
Mix together and set in refrigerator for 2 hours
Fish:
Lemon, salt and ground white pepper to taste
4-8oz portions Fresh Red Snapper
Prepare fish for the grill, lightly season with salt, pepper and lemon.
Grill fish to medium well.
Top fish with salsa
*Note Cumin is a very powerful and flavorful spice. Should you require a bolder flavor, add a little more cumin, a pinch at a time until desired flavor is achieved.
